              Sheepherders Bread

     3        cups             hot milk -- very hot
     1/2     cup               sugar
     2        teaspoons     Yeast
     1/2     cup                shortening
      2 1/2  teaspoons     salt
      9 1/2  cups             flour -- more or less
 
In a large bowl combine hot milk, shortening, sugar & salt. Stir until shortening melts. Cool to luke warm.  Stir in yeast, cover & let set 10 to 15 minutes, until bubbly.  Stir in flour a little at a time until a good consistency.  Punch down and kneed a little very 10 minutes 6 times.  Kneed down and put in Dutch Oven, let it rise until double in bulk.  Bake at 375 degrees for 35 to 40 minutes.
