Potatoes & Eggs
1/2 pound bacon 1/2 pound sausage (Jimmy Dean) 8 each Parboiled potatoes -- Quartered (the night before store in ice chest) 1 dozen large eggs -- beaten salt and pepper -- to taste 1 each 14 inch Dutch oven
Cook bacon and sausage in the bottom of Dutch oven. Remove bacon and sausage when done. Dice potatoes 1/2 square. Brown potatoes in bottom of Dutch oven. When potatoes have been warmed, and browned add eggs. Salt and pepper to taste. stir until eggs are set .
*Note: (left over Cowboy Potatoes or Dutch oven Potatoes make this breakfast even better). Sometimes I will cook up a batch of potatoes just to save for the morning breakfast!
