Pineapple UpSide Down Cake
1/2 cube butter 2/3 cup brown sugar 12 each pineapple slices -- 12 - 16 slices 12 each Maraschino cherry halves -- 12 - 16 1 each cake mix -- prepared by recipe
In a 12" oven (lined with heavy duty foil) heat butter and brown sugar in bottom until melted and well mixed. Place pineapple rings on top of butter/sugar mixture and put cherries in the middle of the pineapple rings. Pour the prepared cake batter over the top. Cook with 7 - 8 coals on bottom and 16 - 18 on top.
Cook for 45 minutes or until cake tests done. Turn up side down to serve.
