           Pineapple Upside Down Cake

   1       cup                 butter
   3        each               eggs
   4 1/2  cups               cake flour
   2 1/2  cups               sugar
   1       Tablespoon      vanilla
   4        teaspoons       baking powder
   1 2/3  cups               milk
                        or
   1 1/2  box's              cake mix -- prepared as per dire
   6        Tablespoons   butter
   1        cup                 sugar
   18      each                pineapple rings -- 18-24 rings
   18      each                maraschino cherries -- 18-24 cherries

Beat together butter, sugar, eggs, and vanilla in a large bowl. Sift dry ingredients together. Add alternately with milk to butter mixture. Beat until smooth after each addition. Set aside. Warm a 14-inch Dutch Oven. Mix butter and brown sugar until well incorporated. Pat in an even layer in the bottom of the Dutch oven. Place pineapple rings on the top of the sugar mixture and put cherries in the center of the pineapple rings. Pour the prepared cake batter over the pineapple rings. Bake with 10-12 coals on the bottom and 24-26 coals on the top of the lid. Cook for 45 minutes or until cake tests done. Cool 5-minutes. Turn upside down onto the lid of the Dutch oven to serve.
