Dutch Oven Bird of

Paradise Cake 

   3           cups             flour
   2           cups             sugar
   1           teaspoon      salt
   1           teaspoon      cinnamon
   3           each             eggs -- beaten
   1 1/2     cups             salad oil
   1 1/2     teaspoons     vanilla
   1           cup               crushed pineapple
   1           can               mandarin oranges -- 11 ounces
   1           cup               nuts -- chopped
   2           cups             crushed bananas

   Cream Cheese Frosting:

   1                 package          cream cheese -- 8 ounces
   1                 teaspoon          vanilla
   4                 Tablespoons     butter -- softened
   2 to 2 1/2     cups                 powdered sugar

In  a large mixing bowl combine dry ingredients. Add eggs & oil, then stir until moistened. Do not beat. Stir in the rest of the ingredients. Grease or oil a 12-inch Dutch oven or line Dutch oven with heavy duty foil. Pour in batter. Bake at 350 degrees (7 to 10 coals under 14 to 18 on lid) for about an hour. Invert cake onto tray & frost with cream cheese frosting. Subsittute strawberries or peaches for fruit if desired.

Cream Cheese Frosting:

Beat cream cheese, butter, and vanilla together until well blended. Add enough powdered sugar to make good spreading consistency. Add a small amount of orange juice or milk to thin if necessary.
