Barbecued Country Spare Ribs
Recipe By : Ernie Cox & Willis Peterson
3 pounds country spare ribs 3 cups ketchup 1 can Pepsi cola
In a 12-inch Dutch oven, brown the ribs in a little oil. Use 8 coals under the oven.
Bake the ribs for one hour with 5 coals under and 13 on the lid. Adjust the number of coals if it cook too fast or too slowly.
Remove excess liquid and add Ketchup and Pepsi. Cook with enough heat to keep the sauce bubbling.
Garnish with rose-cut tomato, cheese and parsley.
Hint: Rotate lid and pot every 15 minutes to prevent hot spots.
