Banana Nut Bread

                                  Banana Nut Bread

   5      each             over ripe Banana's
   1      cup               sugar
   2      each              eggs
   1/2   cup               shortening
   2      cups              flour
   1/2   Tablespoon    salt
   1      Tablespoon    baking powder
   1      cup                chopped walnuts
   1      Tablespoon    baking soda

Mash the bananas and add sugar. Let stand about 15 minutes. Add the shortening and beaten eggs. Sift the flour and measure it. Add all other dry ingredients except baking powder. Dissolve the powder in 1 Tablespoons. Of warm water, then add it to the mixture. Stir only until all ingredients are moistened. Add nuts. Bake in greased loaf pans, 8" x 4". Place 4 small rocks or lug nuts on the bottom of the Dutch oven. Place loaf pan on top of the rocks. Bake in your Dutch oven with 18 to 20 briquettes on top and 8 to 12 on the bottom. Cook for approximately 1 hour and 15 minutes. Test with a toothpick
