Applesauce Cake

1 each 12-inch Dutch oven Ingredients: 2 1/2 cups all-purpose flour 2 cups sugar 1 cup raisins 1/2 cup chopped pecans 1 1/2 cups applesauce 1/2 cup shortening 1/2 cup water 1 1/2 teaspoons baking soda 1 1/2 teaspoons salt 3/4 teaspoon ground cinnamon 1/2 teaspoon cloves 1/2 teaspoon allspice 1/4 teaspoon baking powder 2 each eggs
Grease and flour Dutch oven. Beat all ingredients on low speed low speed scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into Dutch oven.
10 coals on bottom, 14 coals on top, Bake for 40-45 minutes or until tooth pick comes out clean.
Dump cake out after letting cake cool down for about 5 minutes. Let cake cool completely before frosting.
Cream Cheese Frosting:
3 8 ounce packages of cream cheese 3 cups powder sugar
Let cream cheese soften then mix until frosting is smooth and fluffy. The frost cake.
