All At Once Sourdough Biscuits

             All At Once Sourdough Biscuits

   2      cups             flour
   2      teaspoons     baking powder
   1/4   teaspoon      soda
   1/2   teaspoon      salt
   3      teaspoons     sugar
   1/4   cup              melted shortening
   1      cup              sourdough start
   2      each            eggs -- beaten

Combine dry ingredients in a bowl, Mixing well, then make a hole in the center and pour in shortening, start and eggs. Mix or knead in the bowl for several minutes. Roll out to 1/2 inch thickness on a floured breadboard or pinch off golf ball sized pieces and shape into biscuits. If you roll out the batter, cut into biscuits with a biscuit cutter or a glass. Place a little salad oil, melted butter or bacon grease in a pie tin and dip both sides of biscuit. Place them close together on a cookie sheet and bake at 350 degrees for 15 to 20 minutes.

If you like biscuits that are a little more like rolls leave out the eggs and shortening. You can also improve on these by letting the dough raise for an hour or two, before you form the biscuits. You can also let the biscuits rise for and hour after they are placed on the cookie sheet before baking.
These variations will change the flavor and make the lighter. Try them and see which you like best.
This is a great recipe for camping out because you can adapt it to the circumstances but don't try it on your friends unless you want to be baking them every time you go out.

You can also use the batter for scones. Just stretch out small pieces and fry in a skillet in an inch or two of hot fat on top the stove. Turn when golden brown. After cooking both sides drain on paper towel and serve hot with butter and honey.
