                "Mountain Man Breakfast"


3       Tablespoons        margarine or cooking oil
12     slices                   bread crusts removed
2       each                    eggs -- per person
2       pounds                sausage, Hampshire Farm Lit'l Smokies -- Pre cooked
16     ounces                 sharp cheddar cheese -- grated
4       ounce can            mild chilies -- drained
                                    salt and pepper

Grease the Dutch oven, bottom and sides, with margarine or cooking oil.

Break bread in small pieces and place in bottom of oven. Pour beaten eggs over bread. In a separate bowl or plastic bag, Mix cheese, sausage, mushrooms, and drained chilies. Pour over mixture, (do not Stir).

Ready to cook. Place over 5 hot coals, and about 20 on top. Cook for 30 minutes. But check in 15 minutes to be sure there is no burning. If bread is burning remove the Dutch oven from the bottom coals. Done when cheese is bubbling and eggs are cooked. Salt and Pepper to taste.
